I assume you've always charged a day rate for labour plus material cost + a percentage. Probably the easiest way to get round this would be to ask to price a full house for the client. That way you can price the job the way you have been doing, ie say two men 3 days, plus Xm2 of 9mm plasterboard, plus X bags of board finish. Then work out the total, divide it by the total m2 of board used, and that will give you a composite rate for labour & materials.

They should be aware that you will need to charge a day rate for small jobs, as it simply won't be worth you while to do say a 3m2 wall once you take into consideration travel to site etc. Also, your rates for dot & dab will be different to fixing with drywall screws, and your rates for boarding a ceiling likewise. You need to know if they want 9mm boards or 12mm, if they want insulation board etc....there are too many variables to just say you charge X pounds per m2. You need more info from them or they might be in a position to sting you.
References :
Professional Building Surveyor

if you know how many m2 you can do in a day and how much you want a day then you can work out a rate e.g. if you want £100 a day and you can do 20m2 a day charge £5 per m2.
obviously this only applies to big work (full rooms etc) for small and awkward jobs charge day work rate e.g. £12-50 per hour. steer clear of supply and fix you need to be too precise with materials also you to have spend money before you earn anything. p.s. the prices i,ve used are just an example change yours to suit.
References :
Reply by saying you don't charge per square metre - you charge per job. Or you could say, if the job is less than 2 m2 then it's x, if it's between 2 m2 and 10 m2 it's y and if it's over 10 m2 it's z. i.e. have a scale depending on the size of the job.
